Craving some apple cake but don't want to take the time and energy to bake a whole cake? Maybe you only want enough for one serving? Then this microwave mug cake is for you! This takes just minutes to whip up and can be customized with different nuts and spices to fit your mood. It turns out so sweet and fluffy that you might want to make a second one...
Ingredients:
1/4 cup flour
1/2 tsp baking powder
1 tbsp brown sugar
1 tsp maple syrup
1/8 tsp vanilla
1 tsp oil
1 tbsp unsweetened dairy free milk
1/8 tsp cinnamon
1/4 cup chopped apples
1-2 tbsp chopped walnuts (or nuts of choice)
1/8 cup powdered sugar
1/3 tsp unsweetened dairy free milk (plus more if needed)
Directions:
Grab a microwave-safe coffee mug.
Measure out the flour and baking powder into the mug.
Add the brown sugar, maple syrup, vanilla, oil, milk, and cinnamon.
Mix until a thick smooth batter forms.
Mix in the chopped apples and walnuts (make sure the batter is THICK so when you hold the mug sideways it doesn’t pour out (almost like wet cookie dough consistency).
Microwave on high for 1 minute, then in 10 second bursts until the cake looks cooked and is slightly pulling away from the edges of the mug. If you overcook it, it will be too dry (try to keep it under 2 minutes). The cake will continue to cook while you remove it from the microwave.
While the cake is cooking, make the icing by mixing the powdered sugar and 1/3 tsp milk in a small bowl. You can make the icing as thick (less milk) or as thin (more milk) as you’d like.
Once the cake has cooked, top it with some icing, cinnamon, extra crushed nuts and enjoy!
Tips and Tricks:
Try adding some other flavors to the icing like chai spice, pumpkin pie spice, maple syrup, agave nectar, or vanilla!
Try adding a scoop of your favorite protein powder. Add an extra 1/8 tsp baking powder + 1 tbsp milk to accommodate the extra dry ingredient.
