BBQ Jackfruit Quesadillas

BBQ Jackfruit Quesadillas

Treat yourself to lunch today with these ooey gooey, meaty, vegan quesadillas! And if you live near a Native Foods, I’d highly recommend picking up some of their vegan ranch dressing to dip them in


BBQ Jackfruit Ingredients:

  • 2 cups of shredded jackfruit (either fresh or canned)

  • 1 tsp garlic powder

  • 1/4 tsp smoked paprika

  • 1/3 cup vegan bbq sauce

  • 1 tbsp neutral-flavored oil (I used avocado oil)

Quesadilla Ingredients:

  • 8-10 tortillas (to make 4-5 quesadillas)

  • Vegan shredded cheese of your choice (I used pepperjack)

  • Refried beans

  • Corn

  • Cilantro for topping

  • Vegan ranch or sour cream for dipping

Directions:

  • Start off by cooking the jackfruit. If using canned jackfruit, squeeze as much liquid out as possible first.

  • Heat a frying pan on medium heat, and add the jackfruit.

  • Add a little bit of oil so the jackfruit doesn't stick to the pan.

  • Cook for 4-5 minutes until it begins to brown.

  • Add the spices and bbq sauce to the jackfruit.

  • Cook, stirring occasionally, for another 2-3 minutes until very fragrant.

  • Once your jackfruit is done, remove the pan from heat.

  • Heat a new large, clean, dry frying pan over medium heat.

  • While your pan is heating, assemble your quesadillas.

  • Add a thin layer of refried beans, then cheese, corn, and about 1/2 cup of the jackfruit. ○ You may need more or less jackfruit depending on the size of your tortillas.

  • Place your assembled quesadilla in the heated pan and cook, covered, for a few minutes on each side until the tortillas are browned and the cheese is melted.

  • Remove the quesadilla from the pan and let it cool for a few minutes before cutting.

  • Cut the quesadilla into 6ths or 8ths.

  • Serve with some fresh cilantro and ranch or sour cream.

 

Tips and Tricks:

  • You can play around with the fillings in this. Try adding some shredded greens, peppers, onions, avocado, or anything else you'd like.

  • This bbq jackfruit is a great base for other dishes like tacos, burritos, bowls, or even on top of pizza.
