Classic Vegan "Chicken" Salad

Vegan chicken salad?! You heard that right! This is a replacement for all you vegans out there who miss eating chicken salad as a snack or for lunch. I've made this many times to put on crackers, toast, or hoagie rolls. The trick to this recipe is letting it chill in the fridge to let all the flavors come together, so it does require a bit of patience and planning ahead. But once it's ready, you'll be wishing you doubled this super easy vegan chicken salad recipe!


Ingredients:

  • 10oz vegan chicken (I used a whole bag of Gardein chick'n strips)

  • 1/3 cup vegan mayo

  • 1 large celery stalk

  • 1/2 small cucumber (optional)

  • 1 tsp dijon mustard

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper

  • Salt to taste

Directions:

  • Begin by cooking your vegan chick'n according to the directions on the bag. ○ I used the Gardein chick'n strips and microwaved them until warm. I did this because a) my airbnb doesn't have a stove or hot plate, and b) microwaving them prevents them from getting crispy and is more similar to baked chicken.

  • While your chick'n cooks, finely chop the celery and cucumber.

  • Add all the ingredients (except the chick'n) into a bowl and mix.

  • Take the cooked chick'n and either shred it with a fork or chop it into small cubes.

  • Add chick'n to the bowl and stir gently until everything is combined evenly.

  • Refrigerate for at least 2 hours (or overnight) before enjoying.

  • Serve on a sandwich, crackers, or in a wrap!

 

Tips and Tricks:

  • This gets better the longer it sits! I usually try to make this the day before I plan on having it for lunch or dinner.

  • For a great party appetizer, serve on a saltine cracker with a little bit of the Follow Your Heart Chipotle Mayo and lettuce!
