It's fall and you know what that means! I'm swimming in apples. I'm tired of making traditional apple recipes so I thought it was time for some experimenting. I had an almost empty box of pancake mix and some vegetable oil and this recipe was born! The result is a mix between apple pie, cinnamon toast crunch, and funnel cake. Not healthy at all but it sure is delicious!
Ingredients:
2 apples of your choice
1 cup of instant pancake batter (I used Pearl Milling Company)
1 tsp vanilla extract (I used Beyond Good)
1/2 cup of plant milk (I used almond milk)
Vegetable oil for frying
1/2 cup confectioners sugar + 1 tbsp cinnamon
Directions:
Heat at least 1 inch of vegetable oil in a pot on a stove over medium heat.
Peel and slice the apples.
Lay the apple slices on a paper towel and cover them with another paper towel to dry.
Meanwhile, mix the pancake batter, vanilla, and milk. Mix it until you have a smooth pancake batter (add more milk if needed).
Add 10 slices of apples into the pancake batter and gently mix until they're evenly coated.
Carefully drop one slice at a time into the hot oil.
Fry until they're golden brown on both sides.
Remove them from the oil and place them on a clean paper towel to dry.
When the apples are cool enough to handle (but make sure they're still warm), toss them with the confectioners sugar and cinnamon.
Repeat in batches with the rest of the apple slices.
Eat them while they're hot!
Tips and Tricks:
You can use granulated white sugar if you don't have any confectioners sugar.
Use any leftover batter to make pancakes!
Store any leftovers in an air-tight container for up to 2 days. Reheat on a baking sheet in the oven at 350° F for about 5 minutes or until they're warmed through.
