Tofu Ingredients:
1/2 block (8oz) of extra firm tofu
1 cup of cornstarch
1 tbsp chipotle powder
1 tbsp garlic powder
1 tsp black pepper
Oil for frying
Chipotle Sour Cream Ingredients:
1/2 cup of vegan sour cream (I use the Tofutti brand)
2 tsp chipotle powder (or 1-2 tbsp chopped chipotle peppers in adobo sauce)
1 tsp garlic powder
1/2 tsp cayenne powder (optional)
1 squeeze of lime juice
Taco Ingredients:
8-10 corn tortillas
Avocado
Fresh cilantro
Directions:
Make the tofu:
Start with the tofu. First, press your tofu to remove as much liquid as possible. Wrap in a kitchen towel, then place a weight on top (like a dinner plate). Let it sit for about 5 minutes.
Meanwhile, combine the cornstarch and spices in a bowl.
Additionally, heat the oil in a frying pan or sauce pan on low.
Once the tofu is dried, slice into long strips, about 1/2 thick.
Coat the tofu strips with the cornstarch mixture, then drop into the oil.
Fry on low for about 8-10 minutes or until the tofu is golden brown.
Remove from the oil and transfer to a drying rack or a plate covered in paper towels to cool.
While the tofu is frying and cooling, you can prep the rest of your tacos.
Make the chipotle sour cream:
Combine all the chipotle sour cream ingredients in a small bowl. Only use the cayenne pepper if you want the sour cream to be spicy.
Stir well to combine until everything is mixed evenly.
Taste and add more spices as needed.
Assemble the tacos:
Once your tofu and sour cream are both done, cook your corn tortillas.
Heat a frying pan over medium/high heat.
Place 1 corn tortilla in your pan at a time. Cook until both sides are golden brown.
You can use oil if you'd like to make them a little crispier, but I just use a dry frying pan to cut calories.
Once your corn tortillas are cooked, assemble the tacos.
Place 1-2 slices of tofu, some avocado, cilantro, and sour cream in each taco.
Sprinkle with extra chipotle powder and lime juice.
Enjoy with a side of rice, chips, salsa, or anything else!
Tips and Tricks:
Play around with the fillings too. Try adding some kimchi, purple cabbage, salsa, guac, shredde carrots, or lettuce!
