Frozen Blueberry Coconut Cups

These vegan frozen blueberry coconut cups are the perfect way to cool down during a hot summer day! These dairy-free, no-bake dessert are about 100 calories each and are packed with antioxidants and healthy fats from the coconut.
Ingredients:
2 cans (13.5 oz each) light coconut milk
5 graham crackers
3 tbsp solid coconut oil
6 tbsp raw agave, divided in half
1 cup blueberries or mixed berries
Directions:
Chill the coconut oil in the fridge for an hour so that it hardens. Place a metal bowl in the fridge to chill as well.
Place the graham crackers inside a ziplock bag and, using a mallet, smash them into crumbs.
In a large mixing bowl, make the crust by combining the graham cracker crumbs, solid coconut oil, and 3 tbsp of agave. Stir to combine until the crust becomes crumbly.
Line a cupcake baking sheet with paper liners. Scoop about 1-2 tbsp of the crust mixture into each cupcake liner. Be sure to use the entire amount of crust, and that there is an even amount in each liner. Press down with the bottom of a pint glass or your fingers to flatten the crust. Set aside.
Take your chilled metal bowl out of the fridge. Add the 2 cans of coconut milk to the bowl.
Using an electric mixer, whip the coconut milk until soft peaks form.
Add the remaining 3 tbsp of agave and mix again, just enough to combine evenly.
In a separate small bowl, add the fresh berries (but set a few aside to use as toppings later).
Using a fork or mallet, smash the berries to form a pulp.
Using a spatula or large spoon, gently fold the berry pulp to the whipped coconut mixture.
Evenly distribute the berry coconut mixture into the cupcake liners.
Top with some extra berries.
Place in the freezer for 2 hours to set.
Thaw for about 5 minutes before eating. Enjoy!
