Try this fun way to cook potatoes! These vegan hassleback potatoes on the grill are a great way to cook potatoes outside if you're in a small kitchen during the summer. Throw some mushrooms on the grill while you're cooking the potatoes and you've got yourself a hearty dinner!
Ingredients:
5 medium-sized golden potatoes
3 tbsp melted vegan butter
1 tsp garlic powder
1/2 tsp black pepper
Salt to taste
Vegan sour cream for topping
Scallions for topping
Directions:
Preheat your grill to about 450° F.
Cut your potatoes into thin slices, leaving about 1/4 inch at the bottom un-sliced. The slices don't have to be perfectly even. ○ To prevent slicing completely through the potato, you can place the potato between the handles of two wooden spoons or chopsticks.
Microwave the potatoes for 4-5 minutes to soften.
Meanwhile, in a small bowl, mix the melted butter together with the garlic, pepper, and salt.
Place each potato on it's own piece of heavy-duty tin foil (careful, they will be hot).
Brush the potatoes with the melted butter and spice mixture. Try to get the butter to go down a few of the slices. Don't over-do it on the butter, you don't want them swimming in it.
Wrap the tin foil tightly around the potato.
Place the potatoes on the upper shelf of your grill (or turn the heat down to low and place them directly on the grill).
Grill for about 20 minutes, or until the potatoes begin to get tender (you can open up the tin foil to check if needed).
Turn the grill to light-medium heat.
Remove the potatoes from the tin foil and place them, bottoms down, directly on the grill for about 5 minutes.
Flip the potatoes over and grill for another 5 minutes, or until the tops are browned and crispy. ○ The butter should have been absorbed by now, so there should be no problem flipping them over.
Once they are nice and crispy, remove them from the grill.
Let them cool for a bit, then top with sour cream and scallions.
Serve with a side of mushrooms or other veggies, couscous, pasta, or rice.
Tips and Tricks:
These can also be done in the oven. Heat your oven to 450° F, follow all the directions to prep the potatoes, then bake for about 45-50 minutes. You can broil them on high for 2-3 minutes at the end if the tops need to get more crispy.
