These mini skillet flatbread vegan pizzas are the perfect dinner for a homemade DIY pizza night, or if you don't have an oven in your home or current Airbnb. I will warn that it is a little labor intensive, but is so worth it! This recipe makes 8 mini pizzas, which you can top with whatever your heart desires. Try pesto, mozzarella, and tomatoes. Or the classic peppers & onions. Get creative! Let me know how they turn out by commenting below!


Dough Ingredients:

  • 3 cups of all-purpose flour

  • 2 tsp baking powder

  • 1 tbsp garlic powder

  • 1 tbsp oregano

  • 1 cup of cold water

  • 3 tbsp extra virgin olive oil

Toppings:

  • Vegan cheese (I use the Follow Your Heart brand)

  • Jarred red sauce

  • Cooked veggies (mushrooms, peppers, onions, etc.)

  • Anything else you want!

Directions:

  • Prep your toppings: ○ Cook all your veggie toppings ahead of time. I cooked some sliced mushrooms & onions in a pan with a little oil, and also cooked a batch of peppers & onions. ○ Let them cool to room temperature or enough so you can handle them.

  • Next, make the dough: ○ Combine all the dry dough ingredients in a bowl (flour, baking powder, garlic, oregano) and mix to evenly combine. ○ Add the water and olive oil. ○ Mix the dough with a spatula or spoon until it starts to come together. If it's too dry, add a splash of water. If it's too wet, add a sprinkle of flour. ○ Once it's too difficult to use the spatula, begin to use your hands. ○ Place the dough on a floured surface and knead it about 10-15 times, or until it forms into a nice smooth ball. It should be a soft dough that's not sticky. ○ Place the dough in a closed container to rest for 10 minutes.

  • Get ready to cook: ○ While the dough is resting, heat a large skillet or frying pan over medium heat. Coat the pan evenly in 1-2 tbsp of oil.

  • Prep your pizzas to cook: ○ Once the dough has rested, divide it into 8 pieces. ○ Roll the 8 pieces in some flour so they don't stick to each other, then place them back in the container and cover them so they don't dry out. ○ Take one piece of dough and shape it into a flat circle, about 6-8 inches in diameter. You can use a rolling pin or a pint glass to roll it out. ○ Lift up the dough a few times to make sure it's not sticking to the surface. You can sprinkle a little corn meal or flour underneath to prevent it from sticking. ○ Next, add your toppings.

  • Cook and eat your pizzas: ○ Gently take a spatula and transfer the pizza to your hot pan. ○ Immediately cover the pizza, and let it cook for 3-4 minutes or until the cheese is melted (while the pizza is cooking, you can roll out more dough balls and make more pizzas). ○ Once the bottom of the pizza is slightly brown and the cheese is melted, remove it from the pan. ○ Brush a little more oil onto the pan, and cook your next pizza. ○ Let them cool before cutting into halves or fourths. ○ Enjoy!

 

Tips and Tricks:

  • This is a great pizza party activity! Make a bunch of dough balls ahead of time, but wait to cut them into 8ths until you're ready to start cooking. You can roll out a bunch of pizza crusts at once, then everyone can have adding their own toppings. Get 2-3 frying pans going at once so you can continuously pump out pizzas all night long!

  • You want to make sure to cook your veggie toppings ahead of time. Since the pizzas aren't going into an oven, there won't be any heat coming from above to cook the toppings, and you don't want raw mushrooms or onions on your pizza (or maybe you do!).
