Warm yourself up with my Mom's hearty, easy, quick vegan chili! It's filled with veggies like onion, peppers, and mushrooms. This is a very forgiving recipe and hard to mess up. Simply throw everything into a pot and let it simmer! This is a great dish to make when you're in a lazy mood and need to cook dinner for a lot of people. This plant-based chili recipe is our go-to for warm winter meals. It's chunky, full of flavor, and very filling. Your family won't even miss the meat or cheese!


Ingredients:

  • 1 cup white onion, chopped

  • 1 1/2 cups bell peppers, chopped

  • 2 cups white mushrooms, chopped

  • 2 cloves of garlic, minced

  • 32 oz whole tomatoes in puree

  • 15 oz red kidney beans

  • 15 oz small white beans

  • 1 cup of dark beer or vegetable broth

  • 6 oz tomato paste

  • 4-6 tbsp chili powder

  • 1 tsp salt

  • 1 tsp dried basil

  • Louisiana hot sauce or cayenne pepper to taste

  • Vegan sour cream for topping

  • Tortilla chips for topping

Directions:

  • Heat a large pot or dutch oven on the stove over medium heat.

  • Add in the chopped onion, peppers, and 1/2 cup of water.

  • Cook, stirring occasionally, for about 10 minutes until the veggies become soft and tender.

  • Add in the garlic and cook for another minute.

  • Stir in the undrained cans of tomatoes, rinsed beans, beer or broth, tomato paste, and spices.

  • Bring to a gentle boil, then reduce the heat, cover, and simmer on low for 20 minutes.

  • Add in the chopped mushrooms. ○ To thicken, add more tomato paste and simmer uncovered. ○ To thin, add more broth or water (don't add more beer) and simmer covered.

  • Serve with some vegan sour cream and tortilla chips for topping.

 

Tips and Tricks:

  • If you don't care for the types of beans listed, use whatever beans you prefer!

  • You can add some vegan ground "beef" or "meat" if desired, giving this a more meaty flavor. Add it in at the beginning with the onions and peppers, then follow the rest of the instructions as listed.

  • Store in an air-tight container in the fridge for up to 7 days.
