It's peach season! Treat yourself to this quick and easy breakfast to start your day. It combines warm flavors of cinnamon and oats with light peaches and cream. Enjoy it as 1 serving if you're looking for a high-calorie breakfast, or divide it into 2 servings if you want a lower calorie meal.

Start by making the oatmeal layer. Make the oatmeal according to the instructions on the packet. Set aside to cool.
Next, make the peach parfait layer.
Combine 1 peach (remove the pit first) with the yogurt in a blender or food processor.
Blend until it has a creamy consistency.
In a mason jar or similar glass, layer the parfait: oatmeal, 1 tbsp of crushed walnuts, peach parfait layer, and repeat until your glass is full.
