Pancakes are great but one of the worst things about them is the amount of time they take to make. These little mug pancakes are perfect for when you have a quick craving for breakfast and want to make a single serving. Choose to make a mug pancake with a chocolatey swirl, blueberry filling, or peach cobbler filling. They are all delicious in their own way!
Base Ingredients:
1/4 cup pancake mix (I used original Bisquik)
2 tbsp unsweetened dairy-free milk (I used almond)
1/2 tbsp agave nectar
1/2 tsp stevia
Chocolate Swirl Version:
1/2 tbsp melted butter
1 piece of dark chocolate
Maple syrup for topping
Blueberry Version:
1/4 cup frozen blueberries
Sprinkle of cinnamon
Maple syrup for topping
Peach Cobbler Version:
3 peach slices
1/2 tsp brown sugar
1 tbsp quick oats
Sprinkle of cinnamon
Maple syrup for topping
Directions:
Take a coffee mug (make sure it fits at least 1 cup of liquid) and add all the base ingredients in the mug.
Use a fork to whisk and combine the ingredients until a smooth pancake batter forms.
Next, choose which version you would like.
Chocolate Swirl Version: Melt the butter & dark chocolate in a small bowl, then drizzle it on top of the pancake batter. Use a chopstick or skewer to lightly swirl the chocolate into the batter. Microwave for 90 seconds, then let it rest for 1 minute. Top with maple syrup.
Blueberry Version: Add the blueberries to the batter and mix. Microwave for 90 seconds, then let it rest for 1 minute. Sprinkle the top with cinnamon. Top with maple syrup.
Peach Cobbler Version: Mix the brown sugar, quick oats, and cinnamon into the pancake batter. Place 2 slices of peaches on top and use a spoon to push the peaches to the bottom of the mug. Lay the last peach slice on top. Microwave for 90 seconds, then let it rest for 1 minute. Top with maple syrup.
Tips and Tricks:
Every microwave is different, so you may need more or less than 90 seconds. You want the sides to begin pulling away from the mug slightly, and the top should look cooked. You don't want to overcook them, otherwise the pancake will become too dry.
