Passionfruit Piña Colada

Because everyone could use a taste of summer all year round! It's the end of passionfruit season here in San Diego and I've been trying to get creative with the 80+ passionfruits we picked from the vines in our friends backyard. I've tried making tarts, sorbet, and salad dressings. But this Passionfruit Piña Colada turned out to be my absolute favorite! It's sweet with a little bit of tang, and will make you feel like you're sitting on a tropical beach in the middle of summer.


Ingredients:

  • 15 ripe passionfruits

  • 3/4 cup of unflavored white rum

  • 1 cup of full-fat coconut milk

  • 1/2 cup granulated sugar (or 2 tbsp stevia extract)

  • 1 cup of frozen mango

  • 4 large handfuls of ice cubes

Directions:

  • Slice the passionfruits open, then scoop out the pulp and place it all in a blender. Seeds and everything.

  • Blend the passionfruits for about a minute, until they're as processed as possible.

  • Strain the blended passionfruit into a large bowl, until all the seeds are removed.

  • Pour the passionfruit juice back in your blender.

  • Add the rest of the ingredients into your blender.

  • Blend, on high, until everything is combined and the ice is crushed.

  • Serve immediately while you listen to some tropical island music.

 

Tips and Tricks:

  • This is a very forgiving recipe, and you can taste it as you go. Need more rum? Add more rum. Need it to be sweeter? Add more sugar or stevia. As long as you get it to exactly how YOU like it to taste, you can't go wrong!

  • You can make this in advanced if you're planning a get-together and don't want to be stuck in the kitchen making drinks. Follow all the steps above, but do not add ice. Store it in the fridge in an air-tight container. Then when you're ready to party, blend the piña colada mixture with the ice and serve immediately.
