You've heard of pumpkin pie, but have you heard of pumpkin pie french toast?! This is the perfect breakfast to enjoy during the fall chilly weather with a warm cup of coffee. Please see the notes below about choosing the right type of bread before making this. Then enjoy this dairy-free, egg-free vegan pumpkin french toast!
Ingredients:
6 slices of thick bread
1/2 cup unsweetened almond milk
1/2 cup pumpkin puree
1 tsp pumpkin pie spice*
2 tbsp brown sugar
1 tsp baking powder
Maple syrup for topping
Cinnamon for topping
Directions:
Heat a large frying pan over medium heat, or a griddle to 350° F.
If you don't have a good non-stick frying pan, melt 1 tbsp of vegan butter in the pan.
In a shallow bowl, combine the almond milk, pumpkin puree, pumpkin pie spice, brown sugar, and baking powder.
Dip one slice of bread in the batter until it's covered on both sides, then immediately place it in your frying pan or on your griddle.
Cook both sides for 2-3 minutes, or until the bread is browned.
Repeat with the rest of the bread.
Remove and serve immediately with a side of maple syrup and cinnamon.
Tips and Tricks:
Choosing the right bread is important. You want to use thick, dense bread, otherwise it'll become mushy in the middle. My favorite is Sara Lee's Artesano bread. For this recipe I went with Arnold's Organic Whole Grain bread which wasn't really thick enough, but it still turned out yummy!
I love using a really good non-stick frying pan to cut down on extra calories from butter or oil needed. I'm able to fit 2 slices of french toast in my 12" pan at a time, making this a fairly fast recipe. If you have a griddle where you can cook 3-4 slices at a time, even better!
If you don't have a premade blend of pumpkin pie spice, mix together 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp cloves, a pinch of nutmeg.
This does not store well, so I'd recommend to enjoy it immediately.
