Quick & Easy Creamy Vegan Tomato Pasta Sauce

Can you guys tell I’ve been experimenting a lot with hummus lately? No that was not a typo, this recipe actually has hummus in it! It’s super creamy and even tastes a bit like vodka-sauce. Hummus is my secret ingredient for making jarred red sauce actually taste good. Its fast, easy, and doesn’t even need cheese!


Ingredients:

  • 1 pound (16oz) penne pasta

  • 1 container (10oz) grape tomatoes

  • 1/2 of a small white onion

  • 2 cups of vegan chicken (optional)

  • Fresh basil for topping (optional)

Tomato Sauce:

  • 1/3 cup plain hummus

  • 1 ½ cups tomato sauce (any brand is fine)

  • 1 tsp oregano

  • 2 tsp garlic powder

  • A few sprinkles of crushed red pepper

  • 4 tbsp nutritional yeast (optional but recommended)

  • Salt & pepper to taste

Directions:

  • Bring a large pot of water to a boil. Cook the pasta according to the instructions on the box.

  • Meanwhile, heat a large frying pan or sauce pan on medium heat.

  • Chop your onion, grape tomatoes, and vegan chicken. Add all to the pan and cook. ○ You shouldn't need to add any oil to the pan here since the tomatoes contain a lot of water. If things start to stick, try adding a small splash of water. A good non-stick pan helps too!

  • Cook for 5-8 minutes until tomatoes are soft, onions are translucent, and vegan chicken is warmed.

  • Add all the ingredients under the "tomato sauce" list to the pan.

  • Stir gently to combine.

  • Taste and add any additional spices or seasonings you'd like.

  • Once the sauce is warmed through, toss it with the penne in the larger pot. ○ If it looks like there's not enough sauce on your pasta, add a splash more of the jarred tomato sauce and a spoonful of hummus. Mix gently to combine. It should look a little bit like a chunky vodka sauce.

  • Dish up and top with fresh basil.

 

Tips and Tricks:

  • If you use store-bought hummus, it most likely will contain some oil. If you would like this recipe to be totally oil-free, try using some homemade hummus instead! There are lots of oil-free recipes out there, and I will be experimenting with some next week.
