How many veggies can you pack into your street taco? Well, with this vegan taco recipe you check off quite a few! These veggie-packed street tacos do require some cooking and prep, but the combination of flavors at the end is totally worth it. You'll have a hard time not eating more than 2!
Ingredients:
10-12 corn tortillas
1 can of refried beans
1 zucchini, diced
1/2 white onion, diced
1 red bell pepper, diced & divided in half
1/2 cup black beans
Cayenne, garlic powder, salt & pepper, any other spices you'd like (all to taste)
1/2 packet of taco seasoning for the refried beans (or make your own with 1 tbsp cumin, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp chili powder, 1 tbsp paprika)
Toppings:
1 mango, diced
1/4 red onion, diced
1/2 cucumber, diced
1 avocado, diced
1 handful cilantro, chopped
1 cup of cole slaw mix (shredded green & purple cabbage and carrots)
Shredded vegan cheddar or American cheese
Salsa
Directions:
Prep all your ingredients by dicing/chopping the first 3 veggies in the list above (zucchini, onion, pepper).
Heat 1 tbsp olive oil in a frying pan on med-high heat.
Add in the diced zucchini, white onion, and 1/2 of the red bell pepper.
When the veggies begin to get soft, add in the black beans.
Season with spices (cayenne, garlic powder, salt, pepper).
Meanwhile, scoop the can of refried beans into a microwavable bowl. Heat for 1-2 minutes until warm and creamy. Mix with the taco seasoning.
Continue to dice the rest of your veggies and place in individual bowls/dishes for serving.
When the cooked veggies are done, begin heating your corn tortillas.
Heat another frying pan on medium heat, and place 1-2 corn tortillas in the dry pan. Heat both sides until warm.
Now, you can assemble your tacos however you'd like. We did: ○ Tortilla > refried beans > cheese > sauteed veggies > all of the toppings.
Tips and Tricks:
These are great to make for a party because they are super customizable! Everyone can make their tacos how they'd like. The trick to a great taco bar is: the more toppings the better!
