Stuffed Mushrooms (Vegan & Gluten-free)

These gluten-free stuffed mushrooms will be a hit, even with a non-gluten-free group! They're basically a classic, veganized stuffed mushroom recipe but without the breadcrumbs. But these are so packed with flavor that you won't miss the breadcrumbs at all. They're hearty, "meaty", and have a great Italian flavor. Make these for your next holiday, party, or when you're craving a filling appetizer or side!
Ingredients:
1 package (16oz) full baby bella mushrooms
1/3 cup diced onion
3 cloves garlic
1/2 cup plant-based ground sausage (make sure it's gluten-free)
1/8 tsp liquid smoke
2 tsp wheat-free tamari
1 tsp oregano
½ tsp black pepper
Salt to taste
2 tsp nutritional yeast or vegan parmesan (optional)
Directions:
Preheat your oven to 350º F.
Remove the mushroom stems and scoop out as much of the inside of the mushroom as possible (do not discard).
Place the scooped-out mushroom caps on a lightly greased baking sheet. Set aside.
Chop the mushroom stems, onion, and garlic.
Heat a frying pan over medium heat, and add the chopped veggies to the pan.
Add the sausage, liquid smoke, tamari and spices to the pan.
Cook, stirring occasionally, for 4-5 minutes until the veggies are tender.
Remove from heat and let it cool down enough to handle.
Fill the mushroom caps with about 1-2 tbsp of the veggie mixture. Use up all the mixture.
Bake for 8-10 minutes or until the mushroom caps are tender and slightly browned.
Top with nutritional yeast or vegan parmesan (optional).
Tips and Tricks:
You can make these ahead of time. Follow all the steps above but do not cook them yet. Place the filled mushroom caps in the fridge, then bake as instructed when you're ready to serve.
For some added cheesy goodness, try adding 1/3 cup of vegan mozzarella to the mixture, or topping them with some vegan parm!
