Vegan Thai Pork Lettuce Wraps

Whip up these delicious and healthy Thai Pork Lettuce Wraps in under a half hour! Perfect for lunch, an appetizer, or light dinner. The plant-based Hungry Planet Pork Thai Meatballs cook quickly, have a great meaty texture, and are packed with protein and fiber. These flavorful lettuce wraps will have you saying "mmmm" throughout the whole meal!
Ingredients:
1 bag of Hungry Planet Pork Thai Meatballs
1 tbsp oil (I used grapeseed)
1/2 cup white onion, chopped
2 tbsp soy sauce
1/4 cup peanuts, crushed
2 tbsp cilantro, chopped
Romaine or butter lettuce leaves
Shredded carrot for topping
Sliced cucumber for topping
Peanut Sauce:
1/4 cup peanut butter
2 tbsp soy sauce
1 tbsp sriracha
1/2 tsp ground ginger (or 1/4 tsp fresh grated ginger)
2 tbsp of water
Directions:
Start by defrosting the meatballs.
Place all of the meatballs in a microwave safe dish and microwave them on high for 3-4 minutes or until they're soft.
Meanwhile, heat the tbsp of oil in a frying pan over medium heat.
Add the diced onion to the pan and cook, stirring occasionally, for 3-4 minutes.
Add the defrosted meatballs to the pan.
Cook for a few minutes until the meatballs are warmed through.
Using the back of a fork, smash the meatballs in the frying pan and break them all apart so it begins looks like ground pork.
Add the soy sauce and peanuts to the pan and mix to combine.
Cook for another few minutes or until the pork is warmed through and slightly browned.
Remove from heat and mix in the cilantro. Set aside.
Make the peanut sauce by combining all the ingredients in a small bowl, and use a fork or whisk to mix it into a thin sauce.
Assemble your lettuce wraps with the pork filling, then top them with shredded carrot, cucumber, and a drizzle of the peanut sauce.

Tips and Tricks:
If the peanut sauce is too thick and isn't blending well, add a splash of plant-based milk or water until you get to the desired consistency. It should be thick but thin enough to drizzle.
Store any left pork mix in an air-tight container in the fridge for up to 5 days.
If lettuce wraps are too messy for you, try it in a salad! Place all of the lettuce wrap ingredients in a bowl and use the peanut sauce as your dressing.
