Oatmeal Peach Parfait

It's peach season! Treat yourself to this quick and easy breakfast to start your day. This vegan oatmeal peach parfait combines warm flavors of cinnamon and oats with light peaches and cream. Enjoy it as 1 serving if you're looking for a high-calorie breakfast, or divide it into 2 servings if you want a lower calorie meal.


Ingredients:

  • 1 fresh peach + more for topping (optional)

  • 1 container (5.3 oz) of vanilla or plain vegan yogurt (I used Silk)

  • 1 packet of Quaker brown sugar and maple flavor instant oatmeal

  • 3 tbsp crushed walnuts

  • Cinnamon for topping

Directions:

  • Start by making the oatmeal layer. Make the oatmeal according to the instructions on the packet. Set aside to cool.

  • Next, make the peach parfait layer.

  • Combine 1 peach (remove the pit first) with the yogurt in a blender or food processor.

  • Blend until it has a creamy consistency.

  • In a mason jar or similar glass, layer the parfait: oatmeal, 1 tbsp of crushed walnuts, peach parfait layer, and repeat until your glass is full.

  • Top with fresh peaches, cinnamon, and extra walnuts.

 

Tips and Tricks:

  • This actually stores well, though the oatmeal will harden slightly. If you want to make this the night before for an easy quick breakfast in the morning, add a bit of extra water to the oatmeal to thin it.
